Zucchini Mixed Herbs Fritatta
6 washed and grated zucchinis
1 medium chopped onion
2 tablespoons vegetable oil + 2 more for cake pan
6 eggs, beaten
1/2 cup chopped parsley
1/2 cup chopped coriander (cilantro)
1 tablespoon chopped fresh mint
1 teaspoon dried mint
1/2 teaspoon minced garlic
Salt and black pepper
Cook onion with 2 tablespoons oil over medium heat until transparent. Add grated zucchini, cook until soft about 10 minutes. Remove from pan and cool.
Preheat oven on 200 degrees C.
Grease cake loaf pan on all sides. Cut a baking paper to fit pan and grease it well.
Add the remaining 2 tablespoon of oil to the bottom of the pan and put in the oven.
Meanwhile, mix all ingredients with the cooled zucchini and carefully bring the pan out of the oven.
Pour mixture, into hot pan and bake for 30 minutes.
If still wobbly on top, put under the grill for 3 to 5 minutes.
Cool completely before removing from pan.
Can also be baked in a cupcake pan or a big round pan.
